The answer to why we eat beef and not cow, pork and not pig, and mutton and not sheep is due to the invasion of the Normans (people from what is currently Northern France) of what is currently Great Brittain in 1066. The Normans spoke French and when the English peasants would wait on their conquerers, they spoke French. Gradually, French words for cow, pig and sheep became a part of the English we now speak with the first recorded use of "beef" and "mutton" being sometime before 1300.

And, I know, you think I have too much time on my hands. LOL!
